Butterfly Pea Flowers are famous for their very bright coloured liquor and colour-changing properties. When infused using just a couple of flowers per cup of tea, the infusion is a very bright blue, if lemon or lime is added the colour changes to a lovely shade of violet. These flowers are therefore very popular for iced teas.
